So simple and YUMMY! Makes a great holiday breakfast with the addition of thinly sliced apples layered on top, sprinkled w/cinnimon, walnuts & brown sugar. I like to serve this with a side of sweet dijon bacon & will post a recipe for that later.

Ingredients For baked puffed pancake cassarole

  • 4 Tbsp
    butter
  • 6
    eggs
  • 1 c
    pancake mix
  • 1 c
    milk
  • 1 tsp
    salt
  • 1 tsp
    vanilla extract
  • cinnimon & nutmeg, about a tsp each (optional)

How To Make baked puffed pancake cassarole

    Preheat oven to 450' Melt butter in 9x13 inch baking dish in the oven.

    Combine remaining ingredients and pour into baking dish. Bake for 25-30 minutes or until top pops up.

    Serve warm w/butter and syrup

    This is a very flexible recipe and can be made according to your liking. Can be prepared sweetened or unsweetened. During summer I like to add fresh blueberries to the batter and top w/blueberry puree. Recipe can easily be cut in half.
