I made this for breakfast Thanksgiving morning. Everyone loved it.

Ingredients For bacon frittata-kl

8lg eggs

6 slicebacon
-
1onion, chopped
-
10potatoes, new red
-
1 ccheese, shredded
-
1 Tbspshortening
-
1 tspchili powder
-
1 tspseasoning salt
How To Make bacon frittata-kl

1Add potatoes and a dash of salt to 4 qts water and heat to boiling. Cover and cook until potatoes skins split, about 20 min. Drain and set aside to cool.

2Preheat oven to 375 F.

3Rub shortening on sides and bottom of 13x9 pan.

4Chop onion.

5Cut bacon into small pieces.

6Cook bacon until crisp. Remove and set aside.

7Cook onion in bacon grease until soft. Remove and set aside.

8Chop potatoes into small chunks or shred.

9Place in bottom of a 13x9 pan.

10Sprinkle 3/4 of the bacon on top of the potatoes.

11Beat eggs with the chili powder and seasoning salt. Pour over potatoes and bacon, mixing to coat.

12Sprinkle with the cheese and top with the remaining bacon.

13Bake for 35 minutes or until eggs are done and cheese is bubbly.
