Ingredients For bacon breakfast casserole

4 cfrozen hashbrown potatoes, thawed

1/2 cchopped frozen onions / divided

1/2 cmelted butter
-
1 pkg16oz small curd cottage cheese

2 cshredded cheddar cheese
-
1 1/2 cbacon bits or crumbled crisp bacon

8large eggs/beaten
How To Make bacon breakfast casserole

1preheat oven to 375
-
2mix potatoes, melted butter and 1/2 the onions in a 9x13 pan . Press the potatoes firmly to bottom and sides of pan. Bake 30 minutes until golden brown

3mix together beaten eggs, cottage cheese,shredded cheese, onion and bacon. Fill potato "shell" spreading evenly. Bake an additional 30 minutes or until knife inserted in center comes out clean. Cool 5 minutes before serving
