Ingredients For bacon breakfast casserole

  • 4 c
    frozen hashbrown potatoes, thawed
  • 1/2 c
    chopped frozen onions / divided
  • 1/2 c
    melted butter
  • 1 pkg
    16oz small curd cottage cheese
  • 2 c
    shredded cheddar cheese
  • 1 1/2 c
    bacon bits or crumbled crisp bacon
  • 8
    large eggs/beaten

How To Make bacon breakfast casserole

    preheat oven to 375
  • 2
    mix potatoes, melted butter and 1/2 the onions in a 9x13 pan . Press the potatoes firmly to bottom and sides of pan. Bake 30 minutes until golden brown
  • 3
    mix together beaten eggs, cottage cheese,shredded cheese, onion and bacon. Fill potato "shell" spreading evenly. Bake an additional 30 minutes or until knife inserted in center comes out clean. Cool 5 minutes before serving
