This bacon asparagus strata is a fantastic make-ahead breakfast casserole. A strata has pieces of bread so think of it as a breakfast bread pudding. This simple breakfast dish is filled with flavor. There are bits of asparagus and bell pepper for crunch. Dijon mustard and Swiss cheese add a little tang. Crumbled bacon adds a smoky flavor. Chunks of bread soak up the eggs and milk. When baked, this has a very fluffy texture.

  • 8 slice
    bacon, cooked crisp, drained and chopped
  • 9 oz
    frozen cut asparagus, thawed and well drained
  • 3/4 c
    roasted red sweet peppers, drained and chopped
  • 12 slice
    dry white bread, cut in 1/2 inch cubes (about 8 cups)
  • 3 c
    shredded Swiss cheese (12 oz)
  • 8 lg
    eggs
  • 3 c
    whole milk
  • 3 Tbsp
    Dijon mustard
  • 1/2 tsp
    salt
  • 1/4 tsp
    cayenne pepper

If you can't find frozen cut asparagus, thaw the asparagus and cut each spear into 3 - 4 pieces. To dry out the bread, place it on a baking sheet in a 250 degree oven and bake for 5 minutes on each side.
