This bacon apple breakfast is unexpectedly delicious. The slightly sweet cornbread has a very subtle hint of cinnamon that's a nice contrast to the salty bacon. Apple adds another layer of sweetness and texture. Melted cheddar cheese on top enhances the breakfast casserole. It reminds us of melting cheese on top of apple pie. Kind of strange, but it works. Sweet and savory, it will be a great weekend breakfast or brunch addition.

1/2 lbbacon

2 boxJiffy cornbread

1/2 tspcinnamon

1/2 tspsalt

1 1/2 cmilk

1/4 cbutter

3 Tbspmaple syrup

2 smapples grated or finely diced

1/2 cgrated cheddar cheese
How To Make bacon apple breakfast

1Preheat the oven to 375 degrees F. Fry the bacon to a crisp. Pat the grease from the bacon with paper towels. Crumble the bacon.

2In a large bowl, stir together the cornbread mix, cinnamon, and salt.

3In a medium bowl, scramble the eggs. Then stir in the milk, melted butter, and maple syrup.

4Fold in the bacon and apples.

5Combine the wet ingredients with the dry ingredients. Mix until well combined.

6Pour into a 10-inch skillet.

7Bake for 20 minutes or until all but the center of the cornbread is set. You can also use a pie pan but spray with butter spray. Do not let this overcook as it will dry out. When you take this out the middle will not be done but will continue to cook.

8Remove the cornbread from the oven. Immediately sprinkle the cheese over the cornbread to melt.

9Serve hot with butter and maple syrup.
