This bacon apple breakfast is unexpectedly delicious. The slightly sweet cornbread has a very subtle hint of cinnamon that's a nice contrast to the salty bacon. Apple adds another layer of sweetness and texture. Melted cheddar cheese on top enhances the breakfast casserole. It reminds us of melting cheese on top of apple pie. Kind of strange, but it works. Sweet and savory, it will be a great weekend breakfast or brunch addition.

Ingredients For bacon apple breakfast

  • 1/2 lb
    bacon
  • 2 box
    Jiffy cornbread
  • 1/2 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 4 lg
    eggs
  • 1 1/2 c
    milk
  • 1/4 c
    butter
  • 3 Tbsp
    maple syrup
  • 2 sm
    apples grated or finely diced
  • 1/2 c
    grated cheddar cheese

How To Make bacon apple breakfast

  • Fry the bacon.

    Preheat the oven to 375 degrees F. Fry the bacon to a crisp. Pat the grease from the bacon with paper towels. Crumble the bacon.
  • Combine cornbread mix, cinnamon, and salt.

    In a large bowl, stir together the cornbread mix, cinnamon, and salt.
  • Scramble the eggs and add milk, melted butter, and maple syrup.

    In a medium bowl, scramble the eggs. Then stir in the milk, melted butter, and maple syrup.
  • Fold in the apple and bacon.

  • Combine wet and dry ingredients.

  • Pour into a skillet.

  • Immediately sprinkle with shredded cheese.

  • Serve hot with butter and maple syrup.
