Ingredients For asparagus frittata

  • 1/2 lb
    asparagus, fresh
  • 2
    eggs
  • 1/4 c
    milk
  • 1/4 c
    cheese, shredded cheddar

How To Make asparagus frittata

    Boil asparagus for 2-3 minutes. Let cool. Cut into bite size. Combine eggs and milk.

    Coat a medium nonstick skillet with cooking spray and heat on medium. Add asparagus pieces, immediately followed by egg mixture. Cook gently and undisturbed for five minutes, until edges begin to set. Sprinkle cheese on top. Carefully transfer skillet to broiler and cook under the broiler for 2-3 minutes until eggs are set and are golden in color.

    Cut frittata into 4 wedges and serve immediately.
