Ingredients For asparagus frittata

1/2 lbasparagus, fresh

2eggs

1/4 cmilk

1/4 ccheese, shredded cheddar
How To Make asparagus frittata

1Boil asparagus for 2-3 minutes. Let cool. Cut into bite size. Combine eggs and milk.

2Coat a medium nonstick skillet with cooking spray and heat on medium. Add asparagus pieces, immediately followed by egg mixture. Cook gently and undisturbed for five minutes, until edges begin to set. Sprinkle cheese on top. Carefully transfer skillet to broiler and cook under the broiler for 2-3 minutes until eggs are set and are golden in color.

3Cut frittata into 4 wedges and serve immediately.
