This is a wonderful casserole that can be made for breakfast or a brunch and you can double this recipe very easily for a big morning holiday breakfast with the family

1 lbsliced bacon, diced

1 mdsweet onion, chopped

6eggs, lightly beaten

4 cfrozen shredded hash brown potatoes, thawed

2 cshredded cheddar cheese

1 1/2 c4% cottage cheese

1 1/4 cshredded swiss cheese
How To Make amish breakfast casserole

1In a large skillet, cook bacon and onion until bacon is crisp, drain.

2In a large bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9 baking dish.

3Bake, uncovered, at 350 for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand 10 minutes before serving.
