mexican eggs ( huevos rancheros)
This is a Mexican Breakfast dish. I tweaked a recipe found in a cook book. It is full of the fresh Veggies,and a little spicy. Enjoy!

Ingredients For mexican eggs ( huevos rancheros)

1bell pepper chopped
-
1onion chopped
-
1 ptgrape tomatoes chopped
-
1/8 - 1/4 tspcayenne pepper
-
1pinch salt and pepper
-
1/4 tspcumin
-
3 Tbsplime juice
-
1clove chopped garlic
-
1if desired-chopped green chili pepper or jalapeno pepper
-
4 Tbspbutter or oil for frying
-
1can of black beans if desired
-
6-8 ozshredded mexican cheese or cheddar
-
4eggs
-
2-4taco salad shells baked
-
handful chopped cilantro if desired
How To Make mexican eggs ( huevos rancheros)

1heat butter in pan. Cook the onions and garlic until softened. Add the green pepper,cumin,and Cayenne pepper,and green chili's if desired. Cook until done.

2Add the tomatoes,and ( beans if desired) Add the lime juice salt and pepper to taste. Bring to a boil.

3spread Tomato mixture in a large baking pan,or dish. Make 4 wells in mixture. Crack eggs and place in each well.

4place in 375 degree oven. Bake until eggs are cooked. Sprinkle with cheese. Place back in oven until cheese melts.

5place mixture with 1- 2 eggs in each tortilla shell. Sprinkle with chopped Cilantro,and Serve!
