2italian pork sausage (hot or sweet)

1large romano tomato, seeded and chopped

1/4of a green bell pepper chopped fine

1/4of a red bell pepper chopped fine

1/4of a yellow bell pepper chopped fine

1whole green onion, top and bottom chopped

1/4 cgreen and black olives, sliced thin

1large clove of fresh garlic, chopped fine

1garlic stem, chopped fine (optional)

5 Tbspghee (clarified butter) or 4 t. with 1t, olive oil

1/4 tspfresh fennel chopped fine
-
fresh ground pepper to taste

sea salt to taste

1/4 tspfresh basil chopped fine

1/4 tsporegano, fresh chopped fine

1/4 tsprosemary, fresh chopped fine
-
1/4 tspsage leaves, fresh chopped fine (optional)

1/4 tspmarjoram, fresh chopped fine

1/4 tspthyme leaves, fresh, chopped fine

1/4 tspitalian parsley, fresh chopped fine

1/8 tspred pepper flakes, crushed

1 cflour, sifted then measured

6 lgeggs

1 chalf and half or milk

pinch of sea salt

1/2 cshredded mozzarella cheese

1/3 cfreshly grated parmesan cheese

freshly ground black pepper

1/4 tsphot and smokey paprika
How To Make italian dutch baby

1Preheat oven to 425! One Large cast iron skillet I used my chicken fryer. Add flour, eggs, cheeses, salt, pepper and half and half together. Mix well and set in icebox. Mix all your chopped veggies together along with the chopped herb. Add the paprika, salt and pepper to taste.

2Remove the Italian sausage from it's casings. Brown in a tablespoon of ghee, remove from the skillet. Add to the chopped herbs and the chopped veggies. Saute and remove from pan. Place the rest of the ghee in skillet and heat till skillet is hot. Add the cheese dough to the hot pan and add the mixed herbs and veggies on top.

3Set in hot oven and bake for about 25 minutes. Slice and serve hot! It's also good as Mexican dish by changing the Cheese, meat, spices and herbs. You can use dried herbs to taste instead of the fresh.
