easy ham and cheese quiche
I got this recipe from my mom, not sure where she found it. I have been making it for my husband, who loves this for dinner and devours any leftovers for breakfast. I recently sent an extra pan of this quiche to his construction buddies at work and I received so many compliments that my husband said a couple of them wanted to steal me away from him, ha!

Ingredients For easy ham and cheese quiche

1 1/2 ccubed, cooked ham, very small or finely cubed

1 1/2-2 cshredded, sharp cheddar cheese

1/4 cfinely, chopped onion

3 Tbspfinely, chopped green pepper

1 cpancake mix or buttermilk pancake mix
-
1/4 tspsalt
-
1/8 tsppepper
-
2 cmilk, i use whole milk

5eggs
- TOPPING
-
1/2-3/4 cpanko japanese style bread crumbs or crushed corn flakes

1/4 cbutter, melted
How To Make easy ham and cheese quiche

1Heat oven to 350 degrees.

2Grease a 12x8 inch baking dish. I use a glass pyrex one.

3Place ham, cheese, onion and green pepper in the bottom of the prepared pan.

4In medium bowl, combine pancake mix, salt, pepper, milk and eggs; blend for 3 minutes on medium speed.

5Pour over ham mixture.

6Sprinkle bread crumbs over egg mixture or crushed corn flakes. I have made it both ways and prefer the bread crumbs.

7Drizzle melted butter over bread crumbs.

8Bake at 350 degrees for 50-60 minutes or until golden brown. Serve immediately. I usually serve this with rolls and a fresh salad.
