Ingredients For diabetic friendly quiche (sallye)

  • 1 pkg
    frozen broccoli florets (10-16 ounces)
  • 1 md
    onion
  • 2 c
    sliced mushrooms
  • 4 lg
    egg whites (or 2 cups egg substitute)
  • 1 lg
    egg (optional)
  • 2 c
    skim milk
  • 1/2 c
    grated cheese, parmesan or swiss or your favorite
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    italian seasoning

How To Make diabetic friendly quiche (sallye)

    Preheat oven to 375º F Pour broccoli into colander and allow to thaw and drain Finely dice onion and slice mushrooms Place broccoli, onion and mushrooms in microwave safe bowl and zap for 3 minutes (do not add any liquid)

    Remove bowl from microwave and allow veggies to cool down Add eggs and milk to bowl and whisk until all ingredients are well blended Fold in cheese and seasonings

    Transfer to quiche or baking pan and place in preheated oven. Cook for 40-45 minutes until firm in center Remove from oven and allow to set for 5-10 minutes to settle.
