I made this when all my family was home for the holidays, we have 5 sons and 4 grandbabies and wives and girlfriends :) just added some toast and was a filling and perfectly flavored breakfast, you can sub the sun dried tomatoes for reg. tomatoes but I wouldn't recommend it, the flavor from the sun dried tomatoes must makes this! I let it cook over night so it was ready in the morning, just perfect!

1SPRAY A 6 QT. SLOW COOKER WITH COOKING SPRAY. LAYER 1/2 THE POTATOES ON THE BOTTOM OF THE SLOW COOKER.

2TOP WITH HALF OF THE SAUSAGE, MOZZARELLA AND PARMESAN CHEESE, SUN DRIED TOMATOES AND GREEN ONION, REPEAT LAYERING.

3BEAT EGGS, MILK SALT AND PEPPER IN A LARGE BOWL WITH A FORK OR WHISK UNTIL WELL BLENDED.

4POUR EVENLY OVER POTATOE-SAUSAGE MIXTURE.

5COOK ON LOW SETTING FOR 8 HOURS OR ON HIGH SETTING FOR 4 HOURS OR UNTIL EGGS ARE SET
