Ingredients For another great breakfast casserole

1/2 lbbulk, sausage - i used bob evans hot

1tomato, chopped

1onion, chopped

1 - 30 ozbag, shredded hashbrowns - thawed

8eggs
-
2 cshredded, cheddar cheese
-
1/2 ceggs, substitute
-
1 - 8 ozsour cream
-
1 1/2 tspsalt
-
1 tsppepper
-
1 tspground mustard
-
1/2 tspdill
-
1/2 tsppaprika
- TOPPING
-
3/4 - 1 ccorn flakes, slightly crushed

2 - 3 Tbspmelted, butter
How To Make another great breakfast casserole

1If baking the same day, preheat oven to 350 degree F. Spray a 9 x 13 baking dish with non stick cooking spray. In a large skillet, cook pork sausage (adding onion and tomato half way through) over medium-high heat about 10 minutes, stirring occasionally, until fully cooked.

2In large bowl, toss sausage mixture, potatoes and cheese. Spread into baking dish.

3In another large bowl, beat eggs, egg substitute, milk, sour cream and all spices with a wire whisk until well blended. Pour over potato mixture.

4You can store this in the fridge covered overnight, or bake right away if desired.

5Bake uncovered 35 minutes. Meanwhile, in small bowl, mix cornflake crumbs and melted butter. ( if baking this casserole at a later time, do not mix cornflakes till then.)

6Remove casserole from oven long enough to sprinkle cornflakes over casserole.

7Bake another 15 minutes or until knife inserted in center comes out clean. Enjoy!
