Using fresh oranges is key in this bread for the flavor to really shine through. However, I have made it without adding the zest and using store bought orange juice and the bread still turns out very tasty.

4eggs

1 1/2 csugar

3/4 coil
-
2/3 corange juice
-
2 cshredded, unpeeled zucchini

3 1/4 cflour

1 1/2 tspbaking powder

1 1/2 tspbaking soda

1 tspsalt
-
2 1/2 tspcinnamon

1/2 tspcloves
-
2 tspgrated orange peel
-
1/2 cchopped nuts, optional
- GLAZE

1 cpowdered sugar

2-3 tsporange juice
How To Make zucchini orange bread

1Preheat oven to 350 degrees. Grease and flour bottom only of 2 9x5" loaf pans.

2In large bowl beat eggs until thick and lemon colored; gradually beat in sugar. Add oil, 2/3 c. orange juice, and zucchini. Stir just until combined.

3Stir in remaining bread ingredients. Mix well. Pour into prepared pans.

4Bake at 350 for 45-55 minutes or until toothpick inserted in center of bread comes out clean. Cool 10 minutes then remove from pans and cool slightly on wire rack.

5Mix glaze ingredients. Spread over warm loaves. Cool completely then wrap in tin foil. Store in refrigerator
