Great recipe to use when you have an abundance of zucchini. My grandkids love it. They don't know it's loaded with fruit and vegi's.

Ingredients For zucchini nut loaf

  • 4 c
    sugar
  • 4
    egg
  • 1 c
    margarine (melted)
  • 6 1/4 c
    flour
  • 4 tsp
    cinnamon
  • 2 tsp
    baking soda
  • 2 tsp
    salt
  • 2 tsp
    nutmeg
  • 1 tsp
    baking powder
  • 4 c
    zucchini (shredded & unpeeled)
  • 1 c
    carrots (peeled & shredded)
  • 8 oz
    pineapple, crushed with juice
  • 3 c
    nuts (chopped)

How To Make zucchini nut loaf

  • 1
    Cream eggs and sugar, add margarine, mix till creamy
  • 2
    Blend all dry ingredients. Then add to creamed mixture
  • 3
    Mix carrots, zucchini and pineapple with juice. Then add to mixture. Then add chopped nuts if desired.

    Pour into 4 bread pans.

    Bake at 350 for 60 minutes
