Great recipe to use when you have an abundance of zucchini. My grandkids love it. They don't know it's loaded with fruit and vegi's.

Ingredients For zucchini nut loaf

4 csugar

4egg
-
1 cmargarine (melted)

6 1/4 cflour

4 tspcinnamon

2 tspbaking soda

2 tspsalt

2 tspnutmeg

1 tspbaking powder
-
4 czucchini (shredded & unpeeled)

1 ccarrots (peeled & shredded)

8 ozpineapple, crushed with juice

3 cnuts (chopped)
How To Make zucchini nut loaf

1Cream eggs and sugar, add margarine, mix till creamy

2Blend all dry ingredients. Then add to creamed mixture

3Mix carrots, zucchini and pineapple with juice. Then add to mixture. Then add chopped nuts if desired.

4Pour into 4 bread pans.

5Bake at 350 for 60 minutes
