Ingredients For zucchini bread

3 cshredded zucchini (2-3 medium

1 2/3 csugar

2/3 cvegetable oil

2 tspvanilla extract

4large eggs

3 call purpose flour

2 tspbaking soda

1 tspsalt

1 tspcinnamon

1/2 tspground cloves

1/2 tspbaking powder

1/2 cchopped nuts (optional)

1/2 craisins (optional)
How To Make zucchini bread

1Move oven rack to the lowest position. Preheat oven to 350 degrees. Grease and flour 2-9 inch loaf pans.

2Mix Zucchini, sugar, oil, vanilla and eggs in a large bowl. Stir in remaining ingredients except nuts and raisins. Then gently stir in nuts and raisins. Divide batter evenly between the 2 pans.

3Bake for 1 hour 10 minutes to 1 hour 20 minutes or till knife comes out clean. Cool 10 minutes in pans and then turn out onto a wire rack to cool completely.
