Nuts are optional, but I use chopped pecans, some people like unsalted sunflower seeds. This bread is sooo good!!!

Ingredients For zucchini bread

3eggs

2 csugar

1 cvegetable oil

1 Tbspvanilla extract

2 cgrated peeled zucchini

2 call purpose flour
-
1 tspgrated lemon (optional)

1 tspcinnamon

1/4 tspbaking powder

1/4 tspbaking soda

1 tspsalt
-
1 cnuts, finely chopped (optional)
How To Make zucchini bread

1Beat eggs until light and frothy. Add sugar, oil and vanilla, mixing until thick. Add zucchini and stir throughly.

2Stir in flour cinnamon, baking power, baking soda and salt. Add while stiring until smooth. Add chopped nuts and lemon rind.

3Bake in two greased, floured loaf pans, about 1 hour at 350 degrees. It making muffins, it makes 24 muffins and bake at 350 for approx. 35 minutes.
