This recipe was given to me by a woman I worked with. She said it was the best one she had ever found. It is indeed the best one I have ever found. Everyone loves this bread and it freezes well, too. I sometimes use pecans and sometimes I use walnuts.

Ingredients For zucchini bread

3 cflour

2 csugar

2 cgrated zucchini

3eggs, beaten slightly

1 coil

1 tspsalt

1 tspbaking powder

1 tspbaking soda

2 tspvanilla

3 tspcinnamon

1 cchopped nuts
-
1/2 ccrushed pineapple, drained

1/2 ccoconut
-
1/2 craisins
How To Make zucchini bread

1Measure all ingredients into a large bowl. Mix together.

2Pour into 2 greased and floured loaf pans (or three disposable foil pans) and bake at 325 degrees for 50-60 minutes.
