zucchini bread

This recipe was given to me by a woman I worked with. She said it was the best one she had ever found. It is indeed the best one I have ever found. Everyone loves this bread and it freezes well, too. I sometimes use pecans and sometimes I use walnuts.

Ingredients For zucchini bread

  • 3 c
    flour
  • 2 c
    sugar
  • 2 c
    grated zucchini
  • 3
    eggs, beaten slightly
  • 1 c
    oil
  • 1 tsp
    salt
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 2 tsp
    vanilla
  • 3 tsp
    cinnamon
  • 1 c
    chopped nuts
  • 1/2 c
    crushed pineapple, drained
  • 1/2 c
    coconut
  • 1/2 c
    raisins

How To Make zucchini bread

    Measure all ingredients into a large bowl. Mix together.

    Pour into 2 greased and floured loaf pans (or three disposable foil pans) and bake at 325 degrees for 50-60 minutes.
