Have extra zucchini from the garden or just want to usher in the fall season? This is my sister's recipe for zuccini bread, and it's YUMMY! Makes great Xmas gifts too! ****Please note: Add 1t. salt, 1 t. baking soda 1/4 t. baking powder only IF flour IS NOT self- rising.

Ingredients For zucchini bread

  • 3
    eggs
  • 2 c
    sugar
  • 1 c
    vegetable oil
  • 4 tsp
    cinnamon
  • 2 1/4 c
    zucchini, peeled and grated
  • 3 tsp
    vanilla extract
  • 3 c
    flour- self rising
  • 1 1/2 tsp
    almond extract ( or coconut)

How To Make zucchini bread

    Beat eggs until fluffy. Add sugar, oil, zucchini, vanilla and almond extract. Mix well.

    Combine dry ingredients and fold into egg mixture. Stir until blended. Pour into greased baking loaf pans or a 9x13 pan. Bake for approximately 1 hour At 350 degrees. (check at 45 minutes).
