Found this recipe in an old recipe book and done a little modifying. I have been making this bread for about 9 years now and just can't seem to make enough of it.

Ingredients For zucchini bread

3eggs
-
1 coil
-
2 csugar
-
2 tspvanilla extract

3 cgrated zucchini
-
3 cflour (white or wheat)

2 tspbaking soda

1/2 tspcinnamon
-
1 tspsalt (regular or sea salt)

3/4 tspnutmeg
-
1/4 tspbaking powder
-
1 cchopped dates (optional)
-
1 cchopped pecans (optional)
How To Make zucchini bread

1Beat eggs, oil,sugar, and vanilla until thick.

2Stir in remaining ingredients and mix with large spoon until well blended.

3Pour into 2 greased 9x5 inch loaf pans. Bake at 350 F. for 50 minutes or until a toothpick comes out clean.
