This is my favorite bread! I bake it during the holidays to give away and the rest of the year for us to eat. So easy to make and soooo good.

Ingredients For zucchini bread

  • 4 c
    shredded zucchini
  • 3 c
    flour
  • 2 1/2 c
    sugar
  • 1 1/4 c
    vegetable oil
  • 4
    eggs, beaten
  • 1 Tbsp
    plus 1 teaspoon vanilla
  • 1 Tbsp
    cinnamon
  • 1 tsp
    salt
  • 1 1/2 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1 c
    chopped nuts

How To Make zucchini bread

  • 1
    Heat oven to 325 degrees. Generously grease bottoms of bread pans. Blend all ingredients on low for one minute. Beat on medium for one minute. Bake 50 to 60 minutes till toothpick comes out clean. Cool 10 minutes and then remove from pan... Cool completely.
