I got this recipe from a friend after I started growing zucchini plants in my garden. I would end up with zucchini coming out my EARS, so I make a lot of this bread every Summer!

Ingredients For zucchini bread

  • 3
    eggs
  • 2 c
    sugar
  • 1/2 c
    vegetable oil
  • 1/2 c
    applesauce, unsweetened
  • 2 c
    zucchini, grated
  • 3 c
    flour
  • 1 tsp
    baking soda
  • 3 tsp
    cinnamon, ground
  • 1 1/2 tsp
    salt
  • 2 Tbsp
    vanilla extract
  • 1/4 tsp
    baking powder
  • 1 c
    chopped walnuts

How To Make zucchini bread

    Beat eggs until foamy. Add sugar, oil and applesauce. Mix well.

    In a different bowl, combine flour, baking soda, cinnamon, salt and baking powder. Add to egg mixture and mix well.

    Add vanilla & walnuts and mix well.

    Stir in grated zucchini (if you have a dough hook on your mixer, it works well for this step)

    pour into 2 greased loaf pans and cook in a 350 oven for 50-55 minutes.
