I hope you enjoy this wonderfulbread as much as I do.
When you smell that delicious flavor of the black walnuts a baking...you will think you died & went to heaven!! Back in the early 50's in Indiana we had two huge black walnut trees..(the wash line was strung between both trees) we always enjoyed them.
Oh! how I missed them when we moved. Now 60 yrs later, I want to thank J.A.P. Deb Crane, for being sweet enough to mail me some from her home in WI.After she heard how I love those walniuts! She is my angel!

Ingredients For zucchini,black walnut bread ...(no yeast)

  • 2 tsp
    black walnut flavoring
  • 1 c
    chopped black walnuts
  • 2 c
    zucchini, peeled,seeded, and finely chopped
  • 1 c
    whole wheat flour
  • 2 c
    white flour
  • 1-1/2 tsp
    baking powder
  • 1 tsp
    salt
  • 3
    eggs...beaten
  • 1 c
    cooking oil
  • 1-1/2 c
    sugar
  • handful raisens,....are optional.
  • 2 tsp
    baking soda

How To Make zucchini,black walnut bread ...(no yeast)

    In a mixing bowl beat together the eggs, oil, sugar,black walnut flavoring and ..BAKING SODA !

    (grandma always said the baking soda, is spread more evenly..when you add it to the egg sugar mixture)...so I DO IT !

    Stir in the shredded and drained zucchini.
    Into the sugar, egg mixture.

    Now stir the flour mix into the eggs,and sugar mixture.
    Stir well

    Add those chopped
    WONDERFUL BLACK WALNUTS into the above.

    Put the batter into two WELL GREASED loaf pans
    Bake in a pre-heated 350 degree oven for 1 hour.

    When done remove from oven....
    let sit for 10 minutes..
    Turn out onto a wire rckk to cool.

    Now get the butter out.......LOL

    HINT:...I test for doness..with a pointed wooden chop stick...inserted into the middle of the loak..
    .If it comes out clean,with no batter on it..
