These Cinnamon rolls were served in The Mode Tea Room in Boise ID, maybe in the 50's to early 60's. My Mother passed on a story of when she worked in the kitchen as a teen washing dishes one summer. Not her favorite job! She had said that when the baker removed the rolls from the oven she would just put the pans in the sink - no soaking. And of course, my Mother would have to clean them for the next day. Yummy Cinnamon rolls, no so fun for the clean up!

Ingredients For the mode cinnamon rolls

1 Tbspyeast

3/4 tspyeast

1 canunsweetened evaporated mild

1/2 cbutter
-
1 1/4 cwarm water
-
1/2 tspsalt
-
1/2 csugar
-
7 cflour
-
2eggs
- FILLING AND BASE

1/2 cbutter, softened

3/4 cbrown sugar

cinnamon, to taste
How To Make the mode cinnamon rolls

1Dissolve yeast in warm milk; add (1/2c) butter, water, salt and sugar. Stir in 1 cup flour; then add eggs.

2Mix in 5-6 cups flour; kneed for about 15 minutes or use food processor for 7 minutes.

3Cover and let rise until double in size; then punch down and let rise for 30 minutes.

4On floured surface, roll dough into oblong shape (14 by 18 inches). Spread evenly with 1/3 cup softened butter; sprinkle with 1/2 cup brown sugar and desired amount of cinnamon.

5Roll up and cut 12 rolls 1 1/4 inches thick. Prepare a 9x13 inch pan by spreading evenly with 1/2 cup softened butter; sprinkle with 3/4 cup brown surgar and desired amount of cinnamon.

6Place rolls in prepared pan. Preheat oven to 350 degrees ans bake for 40 minutes. Invert pan right out of the oven onto parchment paper. Serve hot!
