sweet potato cinnamon rolls

These are my answer to a husband who will not eat vegetables. They are light flavorful and can be made with sugar or a sugar subsitute. Everyone loves these with a cup of coffee or tea they are the best!

Ingredients For sweet potato cinnamon rolls

  • 1 1/2 c
    mashed sweet potatoes (cooled)
  • 1/2 stick
    butter
  • 1 c
    sweet potato water saved from potatoes
  • 1 c
    1/2 and 1/2 ( milk may be used instead)
  • 2 Tbsp
    active dry yeast
  • 1 Tbsp
    molasses
  • 1/2 tsp
    salt
  • 3 Tbsp
    sugar or sugar substitute
  • 1 tsp
    baking powder
  • 5 1/2-61/2 c
    all purpose flour
  • CINNAMON MIDDLE
  • 1/4 c
    sugar or sugar substitute
  • 3 Tbsp
    cinnamon
  • 1/2 stick
    butter

How To Make sweet potato cinnamon rolls

    Place mashed sweet potatoes in bowl of stand mixer
  • 2
    Add sofenened 1/2 stick of butter and combine
  • 3
    Slightly warm the liquids and molasses and spinkle on yeast and stir and let sit 1-2 minutes

    Pour yeast liquids over sweet potato mixture and combine
  • 5
    Add salt baking powder and sugar and mix
  • 6
    Mix flour in 1 cup at a time (dough will still be a bit sticky)

    Replace mixing blade and attach dough hook knead with dough hook for 10 minutes

    take dough hook out and cover bowl let rise in warm place about 1 1/2 hours.

    When dough has doubled flour hands and remove from bowl the dump on floured board and roll out to approx 12by13 inch size

    spread on butter, sugar, and cinnamon- roll up and cut in 12 equal slices

    Place in greaded 13x9 inch pan / cover and let rise till doubled

    Bake in a 350 degreed F preheated oven for 25 minutes.
