1/2 ccanola oil

1 csugar

1/2 tspvanilla extract

1/2 tspalmond extract

1 2/3 cflour

1/2 tspbaking powder

1/2 tspbaking soda

1/2 tspsalt

1 1/2 cstrawberries, chopped

1/2 cchopped pecans (or your choice)
How To Make strawberry bread

1Preheat oven to 350 degrees. Grease a 5x9 inch loaf pan.

2In a large bowl, beat the eggs until foamy. Add the oil, sugar, vanilla and almond extracts. Mix well.

3In a separate bowl, sift the flour, baking powder, baking soda, and salt. Add the dry ingredients to the wet, and stir until just barely moistened. Add the strawberries and nuts and mix lightly. Do not overmix.

4Pour into the prepared pan and bake until nicely browned. A toothpick inserted in the center should come out clean. This will take 50 minutes to 1 hour. If browned but not done, cover with foil.

5Store in a sealed container or ziploc. Freezes well.
