1 cvegetable oil

2 csugar

2 tspvanilla

2 czucchini, coarsely shredded

8 1/4 oz. cancan crushed pineapple, well drained

3 cflour

2 tspsoda

1 tspsalt

1/2 tspbaking powder

1 1/2 tspground cinnamon

3/4 tspground nutmeg

1 cwalnuts, finely chopped
How To Make south pacific zucchini bread

1With a mixer, beat eggs to blend. Add oil, sugar and vanilla. Continue beating until thick and foamy.

2With a spoon, stir in zucchini and pineapple

3Combine all-purpose flour, soda, salt, baking powder, cinnamon, nutmeg, and walnuts. Stir in dry ingredients into zucchini mixture just until blended.

4Divide the batter equally between 2 greased and flour dusted loaf pans.

5Bake at 350* for 1 hour or until toothpick inserted in center comes out clean. Cool in pans for 10 minutes; turn out on wire racks to cool.
