Easy & delicious idea for a last minute breakfast potluck or holiday gift. It looks beautiful, too. I'm not sure where this recipe came from, but it could have originally been from a cereal box. Post Raisin Bran has the biggest flakes, which makes it look especially pretty for presentation, but any raisin bran cereal will do. =^..^=

Ingredients For raisin bran bread

4 Tbspbutter or margarine, divided into 2 + 2 tablespoons

2 craisin bran cereal, divided into 1-1/2 + 1/2 cup

1 1/4 cmilk

1egg

3/4 cwhite sugar

2 call-purpose flour

1 Tbspbaking powder
-
1/2 tspground cinnamon, see step #11

1/2 cchopped walnuts, optional

1 Tbspwhite sugar

somewalnut halves for decorating, optional
How To Make raisin bran bread

1Preheat oven to 350 degrees F. Spray cooking spray in 9 x 5 loaf pan.

2Melt 2 Tablespoons of butter or margarine in a medium microwave-safe bowl. (I love my large PC Batter Bowl for this!) Stir in 1 1/2 cups of the cereal and milk until blended. Let stand 1 minute.

3Add egg and 3/4 cup sugar, mixing well with a large spoon.

4Stir in flour, baking powder, and cinnamon until well-blended.

5Mix in the chopped walnuts, if desired.

6Spread into prepared loaf pan.

7FOR THE TOPPING: Melt the remaining 2 Tablespoons of butter or margarine in a small microwave-safe bowl. (I use my small PC Batter Bowl for this.) Stir in the remaining 1/2 cup cereal and 1 Tablespoon sugar until well-blended. Sprinkle over batter.

8Gently press topping and walnut halves into the batter.

9Bake 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes in pan on wire rack, then remove bread from pan and cool completely...

10...OR serve warm with butter or cream cheese. =^..^=

11OPTION: In place of cinnamon, add 1 tsp. vanilla extract with the milk in Step #2.
