Ingredients For pumpkin cinnamon chip muffins

  • 3 c
    sugar
  • 1 c
    oil
  • 4
    eggs
  • 2 c
    pumpkin
  • 2/3 c
    cold water
  • 1 1/2 tsp
    salt
  • 1 Tbsp
    pumpkin pie spice
  • 1 tsp
    vinegar
  • 3 1/2 c
    flour
  • 2 tsp
    baking soda
  • 1 c
    chopped pecans
  • 1 pkg
    cinnamon chips

How To Make pumpkin cinnamon chip muffins

  • 1
    Cream sugar and oil, add eggs and pumpkin, beat well. Add salt, pumpkin spice and vinegar, continue beating.

    Mix baking soda and water. Alternate adding flour and soda water mixture to the pumpkin batter mixing well.

    Stir in nuts and chips just until blended. Fill prepared muffin tins 3/4 full. Bake at 350 degrees, 25 minutes or until a toothpick inserted in the center comes out clean.
