This recipe always makes a moist bread...I wanted to incorporate a cream cheese filling but didnt have it on hand..but I will include it in the recipe =)

Ingredients For pumpkin bread w/streusel topping

1 1/4 call purpose flour

1/4 cbrown sugar, firmly packed

1/2 csugar

1 tspbaking powder
-
1 tspsalt

1/2 tspbaking soda

1 tspcinnamon

1/2 tspnutmeg

1 tsppumpkin pie spices

2eggs
-
1/2 cvegetable oil
-
1/2 csour cream
-
1 tspvanilla extract
-
1 cpumpkin, canned or cooked
How To Make pumpkin bread w/streusel topping

1Pre-heat oven 350*. Lightly butter 9x5 in. loaf pan

2Mix flour, sugars, baking powder & soda, salt, cinnamon, nutmeg, pumpkin pie spice in a large bowl...whisk eggs, oil, sour cream, vanilla, & pumpkin in seperate bowl...add to dry ingredients and fold until combined

3Spread batter in pan and top w/streusel topping...1 pkg.instant maple & brown sugar oatmeal,2 tbls. brown sugar,2 tbls. butter,1 tbls.flour..mix until resembles crumble...spread on top of batter and bake..55 min. or until toothpick comes out clean

4If adding the cream cheese filling...whip 1 package of 8oz. cream cheese & 1/2 cup b.sugar and layer between the batter..then proceed with streusel topping...ENJOY!!! =)
