This is the recipe that my daughter has been making all week... Totally from scratch... We baked the pumpkins, then made this recipe. We are giving several loaves away right now, and freezing some to give away for the holidays and to have for Thanksgiving, Christmas and New Years Day. It is so good! Very moist... The smell goes through the house and brings back happy memories.. Enjoy! This photo was taken with my cell phone, we thought our fall decorations would look good near our bread.

Ingredients For noel's pumpkin bread

  • 3 1/2 c
    sugar
  • 1 c
    vegetable oil
  • 4
    eggs, beaten lightly
  • 1 can
    (16-oz) pumpkin (unsweetened)
  • 3 1/2 c
    flour
  • 2 tsp
    salt
  • 2 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1 tsp
    each: cloves and nutmeg
  • 2 tsp
    each: cinnamon and allspice
  • 2/3 c
    water

How To Make noel's pumpkin bread

    Preheat oven to 350 degrees. Butter and flour 2 9 by 5 loaf pans. Stir together sugar and oil. Stir in eggs and pumpkin. Combine dry ingredients in separate bowl. Blend dry ingredients and water into wet mixture, alternating. Divide batter between two loaf pans. Bake for 30 to 40 minutes or until cake tester comes out clean. Let stand 10 minutes. Remove from pans and cool.
