Ingredients For pineapple zucchini bread

  • 3
    eggs
  • 2 c
    white granulated sugar
  • 3/4 tsp
    nutmeg
  • 1 c
    dates (optional) i don't use them
  • 3 c
    white sifted flour
  • 1 1/2 tsp
    cinnamon
  • 2 c
    zucchini - (remove seeds and blend until smooth)
  • 1 c
    cooking oil
  • 2 tsp
    vanilla
  • 1/2 tsp
    baking powder
  • 1 c
    pecans, chopped
  • 2 tsp
    baking soda
  • 1 tsp
    salt
  • 1 c
    pineapple - (8 1/4 oz. crushed and drained)

How To Make pineapple zucchini bread

    Beat eggs, oil, sugar and vanilla until thick
  • 2
    Stir in remaining ingredients and mix well
  • 3
    Pour mixture into 2 greased and floured 9" X 5" loaf pans

    Bake at 350 degrees for 1 hour or until wooden inserted toothpick comes out clean.
