When I found this recipe I thought I would just try it and very glad I did. I will never make regular zucchini bread again! This is so good!!

Ingredients For pineapple zucchini bread

3 call purpose flour
-
2 csugar
-
2 cgrated zucchini
-
3eggs, slightly beaten
-
1 cvegetable oil
-
1 tspbaking powder
-
1 tspbaking soda
-
2 tspvanilla extract
-
3 tspcinnamon, ground
-
1 cchopped walnuts
-
1/2 ccrushed pineapple--drained

1/2 cshredded coconut
-
1/2 craisins
How To Make pineapple zucchini bread

1grease and flour 2 loaf pans or 3 smaller foil pans. In large bowl mix oil,sugar and the eggs until smooth.Fold in the zucchini. In a separate bowl mix the flour,baking soda,baking powder,salt and cinnamon. Fold this mixture into the wet mixture and add the vanilla, crushed pineapple,coconut,raisins and chopped walnuts.

2Spoon the mixture into 2 loaf pans that are greased and floured. Bake at 325 degrees for 50-60 mins or until toothpick comes out clean. ENJOY!!
