I got this recipe from my friend's grandmother Ginevra Sullivan in Amarillo, TX during the 1970s. I use it when I have freckled bananas. Mrs. Sullivan always called it "cake". I call it yummalicious!

Ingredients For nana's nana cake or bread

  • 2 1/4 c
    sugar
  • 1 c
    chopped pecans
  • 1 1/2 c
    mashed bananas or crushed pineapple (not both)
  • 3
    eggs
  • 1 pinch
    salt
  • 3/4 c
    butter or margarine
  • 3/4 c
    buttermilk
  • 1 1/2 tsp
    soda
  • 1 1/2 tsp
    vanilla extract
  • 3 c
    flour

How To Make nana's nana cake or bread

  • 1
    Cream butter, sugar and eggs; add remaining ingredients and mix well. Bake at 350° for about 30 minutes (longer if a loaf or bundt pan). Makes 3 layers or 2 loaves or 1 bundt pan. Test with toothpick to be sure center comes out clean. Freezes well.
