I am posting this recipe for the Hawaii region of the world tour event. This is based on a recipe from "Best of the Best Hawaii Cookbook", that I changed for our tastes.

Ingredients For pineapple nut bread

2 cflour

1 Tbspbaking powder

1/2 tspsalt

1/2te tspcinnamon

1/4 tspnutmeg

1/2 cvegetable oil

1/2 csugar

1/4 cbrown sugar, lightly packed

2eggs
-
2/3 cmilk

1 tspvanilla extract

8 ozcan of crushed pineapple, drained

1/2 cchopped pecans
How To Make pineapple nut bread

1Preheat oven to 350 degrees. Lightly oil and flour one loaf pan.

2Sift flour, baking powder, salt, cinnamon and nutmeg onto wax paper. In a large bowl, beat oil with sugars; add eggs, one at a time; mix well.

3Add dry ingredients alternately with the milk. Stir in vanilla; add pineapple and pecans. Bake for 50 minutes. Cool completely before cutting.
