Last fall, I made several half-pints of Pear Butter. It's similar to apple butter, but with the emphasis on nutmeg instead of cinnamon in the spices. I came up with this recipe, based on a pumpkin bread recipe, to use my pear butter. I've made a test batch, and it is delicious! I'll be serving it at a baby shower tomorrow, so I'll get some nice pictures posted soon.

Ingredients For pear butter nut bread

3/4 call purpose flour

1/2 clow carb baking mix

1/4 calmond meal/flour

1/4 cground flaxseed

1/4 tspbaking powder

1 tspbaking soda

3/4 tspsalt

1/2 tspcinnamon
-
1/4 tspnutmeg
-
1 1/3 csugar
-
1/3 csoft shortening (i used coconut oil)

2 lgeggs
-
1 cpear butter
-
1/3 cpear nectar (or milk)

1/2 tspvanilla
-
1/2 ccoarsely chopped walnuts or pecans

1/3 craisins or chopped dates (optional)
How To Make pear butter nut bread

1Preheat oven to 350°F.

2Stir together the dry ingredients (except sugar) in a medium bowl.

3In a large bowl, beat the sugar, shortening, and eggs until light and fluffy. Add the pear butter and beat in.

4Add the dry ingredients in 3 additions to the liquid ingredients, alternately with the pear nectar (or milk). Stir in the vanilla.

5Fold in the nuts and raisins or dates (if used).

6Place batter into 3 greased mini-loaf pans and bake about 25-30 minutes or until bread tests done with toothpick.

7This can also be made in one large 9 x 5 loaf pan. It will take about 35-40 minutes to bake.
