Ingredients For mom's zuchinni bread

3 call purpose flour

2 tspbaking soda

1/2 tspbaking powder

1 tspsalt

1 1/2 tspcinnamon, ground

2 csugar

2 tspvanilla extract

3eggs

2 ccoarsley shredded zuchinni

3/4 cfinely chopped pecans or walnuts

1 can(8 0z) crushed pineapple, drained

1 ccanola oil
How To Make mom's zuchinni bread

1Combine flour, baking soda, salt, baking powder, cinnamon and nuts. Set aside.

2Beat eggs slightly in large bowl then add: sugar, oil and vanilla. Beat until creamy. Stir in zucchini and pineapple.

3Add dry ingredients stirring only until moistened.

4Spoon batter into two well greased and floured loaf pans.

5Bake at 350 degrees for 1 hour or until done. Cool 10 minutes in pan.
