I first tasted this wonderful sweet potato bread about 30 years ago, when a nice lady that worked with my husband gave us a loaf for Christmas. It was absolutely heavenly, so moist and delicious! It originally called for baking the loaves in 1 pound coffee cans, but I've since had to switch to loaf pans because I can no longer find coffee in cans, only bags and plastic containers. This lovely lady has since passed on, but she was sweet enough to give me her wonderful recipe before she retired. I hope you all enjoy it!

Ingredients For mary's special sweet potato bread

  • 2 c
    mashed sweet potatoes (you can use either canned or fresh oven baked. drain well, if using canned).
  • 3 c
    white sugar
  • 4 lg
    eggs
  • 1 c
    vegetable or canola oil
  • 3/4 c
    orange juice
  • 3 1/2 c
    all purpose flour
  • 1 1/2 tsp
    salt
  • 2 tsp
    baking soda
  • 2 tsp
    ground cinnamon
  • 1/2 tsp
    ground nutmeg
  • 1/2 tsp
    ground allspice
  • 1/2 tsp
    ground cloves

How To Make mary's special sweet potato bread

    Preheat oven to 350 degrees. Grease and flour two loaf pans, set aside.

    In large mixing bowl, beat together sugar, eggs and oil. Stir in orange juice and mashed sweet potatoes. In separate bowl mix together flour, salt, baking soda and spices. Stir into sweet potato mixture just until combined. Pour into prepared pans and bake 1 hour and 15 minutes or until golden brown and toothpick inserted in center comes out clean.

    Cool in pans for 10 minutes. Remove from pans and cool on wire rack.
