This is a Thanksgiving tradition at our house, but just as good for a Sunday Brunch, or a mid-week special treat. Very moist and full of delicious flavor!! The original recipe called for water but I substituted crushed pineapple as that really enhances the flavor.

1 1/2 csugar

1 1/2 cflour

1/4 tspbaking powder

1 tspbaking soda

3/4 tspsalt

1/4 tspginger

1/2 tspcinnamon

1/3 cbutter
-
2eggs
-
1 cpumpkin
-
1/3 cpineapple, crushed

1/2 cnuts, chopped (optional) i don't use them but if i did, i would use pecans
How To Make mama robin's pumpkin bread

1Preheat oven to 350. Grease & flour a loaf pan.

2Sift sugar, flour, baking powder, baking soda, salt, ginger & cinnamon together and set aside.

3Cream together butter and eggs. Stir in pumpkin and pineapple.

4Add dry ingredients and mix well. (you can add 1/2 c. chopped nuts here if desired) Bake @ 350 for 1 hour. Cool 10 min. and remove from pan. You can serve this slightly warm or store and serve the next day.
