Nov. 11,2011 ,This Recipe Is A Healthy If You Are On A low Fat Diet.Or A Diabetic.It Is Good Even If You Are Not On A Diet So Dig In And Enjoy. In Our Recipe I Used Nutmeg Instead Of Cinnamon As We Have One Who Can Have Cinnamon But Our Pumpkin Bread Is Still Very Good. Doris

Ingredients For low -fat pumpkin bread

1 cpumpkin, canned or cooked

1/2 csugar

2 Tbspvegetable oil

1/2 cplain low-fat yogurt

3/4 call-purpose flour

3/4 cwhole wheat flour

1 tspbaking powder
-
1 tspbaking soda
-
1 tspground cinnamon
-
1/4 tspsalt
-
1/2 craisins or chopped nuts
How To Make low -fat pumpkin bread

1in a large mixing bowel,beat together pumpkin,sugar,oil, and yogurt

2in a medium bowel, combine the flours,baking poder,soda, cinnamon and salt to pumpkin mixture. stirring just until moistened.

3stir in the nuts or raisins. Here At Home I Put 1/2 And 1/2 nuts and raisins.

4pour into a greased 9x5x3-inch loaf pan.

5in a preheated 350* oven

6bake for 45-50 minutes or until a wooden toothpick inserted near the center comes out clean. check for doneness after 40 minutes.

7cool on wire rack for 10 minutes.

8this recipe can also be baked in 2 mini-loaf pans.
