Anything with lemon in it is a big hit with our family. The combination of the Lemon and the Cranberries give these bars just enough of a sweet/tart kick that makes them especially refreshing.

Ingredients For lemon-cranberry bars

  • ½ c
    frozen lemonade concentrate, thawed
  • ½ c
    spoonable sugar substitute
  • ¼ c
    margarine
  • 3
    eggs
  • 1 ½ c
    all purpose flour
  • 2 tsp
    lemon zest, grated
  • ½ tsp
    baking soda
  • ½ tsp
    salt
  • ½ c
    dried cranberries
  • #8 dutch oven
  • non stick spray

How To Make lemon-cranberry bars

    1. Preheat oven to 375 degrees,11 coals on the top and 6 on the bottom. Lightly coat #8 Dutch oven with nonstick cooking spray; set aside.

    2. Combine lemonade concentrate, sugar substitute, margarine and eggs in medium bowl, mix well. Add flour, lemon peel, baking soda and salt; stir well. Stir in cranberries; pour into prepared pan.

    3. Turn lid and Dutch Oven ¼ turn in opposite directions every 10 minutes or so for even browning of the bars. Bake 20 minutes or until light brown. Cool about 10 minutes in Dutch oven then turn out onto wire rack to completely cool. Cut into 16 pieces.
