My wonderful mother in law taught me a secret that makes this bread special: you need to soak the cornmeal in milk for 15 minutes without stirring. It eliminates the grittiness, resulting in a moist, cake-like texture. This is our favourite cornbread recipe. It results in a sweet, subtle cornbread, which is quick and easy to make and can easily be varied, with excellent results. The crumb on this bread is outstanding. Just as perfect when made plain or with additions. *Please add in moderation, no more than 1/2 cup of ingredients in total, if using any or all of the additional options.

Ingredients For kato's sweet cornbread

  • 3/4 c
    yellow cornmeal
  • 1 1/4 c
    2% or whole milk
  • 1 c
    all purpose flour
  • 1/3 c
    white sugar
  • 3 Tbsp
    baking powder
  • 1 tsp
    salt
  • 1
    jumbo egg, beaten
  • 1/4 c
    vegetable oil (I use corn or potato)
  • OPTIONAL INGREDIENTS
  • 1/2 c
    bacon, fried, diced or crumbled
  • 1/2 c
    spicy pepperoni slices, thinly sliced
  • 1/2 c
    sweet or hot peppers, thinly diced
  • 1/2 c
    shredded mild or medium cheddar
  • 1 - 2 Tbsp
    fresh herbs (like basil, thyme, or oregano)
  • 1/4 - 1/2 tsp
    cayenne pepper or paprika

How To Make kato's sweet cornbread

    Mix cornmeal and milk together in a large bowl. Stir well and let sit at room temperature for 10 - 15 min, to get rid of grittiness. Do not stir again until desired time has elapsed.

    If using any of the optional ingredients, prepare them ahead of time.

    Preheat oven to 400 degrees F and lightly grease an 8-inch square or 9-inch round pan; set aside until needed.

    In a small bowl, sift together the flour, sugar, baking powder and salt and set aside until needed. Please do not decrease the sugar amount. This is a sweet cornbread.

    Once the cornmeal mixture is ready, add the flour mixture to the bowl along with the beaten egg and oil, mixing well. If using any of the additional ingredients, gently fold them in now.

    Bake at 400 degrees F for about 25 minutes.

    Serve the hot bread with butter and enjoy! Perfect with so many meals, chicken, beef, pork or shrimp.
