kato's sweet cornbread
My wonderful mother in law taught me a secret that makes this bread special: you need to soak the cornmeal in milk for 15 minutes without stirring. It eliminates the grittiness, resulting in a moist, cake-like texture. This is our favourite cornbread recipe. It results in a sweet, subtle cornbread, which is quick and easy to make and can easily be varied, with excellent results. The crumb on this bread is outstanding. Just as perfect when made plain or with additions. *Please add in moderation, no more than 1/2 cup of ingredients in total, if using any or all of the additional options.

Ingredients For kato's sweet cornbread

3/4 cyellow cornmeal

1 1/4 c2% or whole milk

1 call purpose flour
-
1/3 cwhite sugar
-
3 Tbspbaking powder
-
1 tspsalt

1jumbo egg, beaten
-
1/4 cvegetable oil (I use corn or potato)
- OPTIONAL INGREDIENTS

1/2 cbacon, fried, diced or crumbled
-
1/2 cspicy pepperoni slices, thinly sliced

1/2 csweet or hot peppers, thinly diced
-
1/2 cshredded mild or medium cheddar
-
1 - 2 Tbspfresh herbs (like basil, thyme, or oregano)

1/4 - 1/2 tspcayenne pepper or paprika
How To Make kato's sweet cornbread

1Mix cornmeal and milk together in a large bowl. Stir well and let sit at room temperature for 10 - 15 min, to get rid of grittiness. Do not stir again until desired time has elapsed.

2If using any of the optional ingredients, prepare them ahead of time.

3Preheat oven to 400 degrees F and lightly grease an 8-inch square or 9-inch round pan; set aside until needed.

4In a small bowl, sift together the flour, sugar, baking powder and salt and set aside until needed. Please do not decrease the sugar amount. This is a sweet cornbread.

5Once the cornmeal mixture is ready, add the flour mixture to the bowl along with the beaten egg and oil, mixing well. If using any of the additional ingredients, gently fold them in now.

6Bake at 400 degrees F for about 25 minutes.

7Serve the hot bread with butter and enjoy! Perfect with so many meals, chicken, beef, pork or shrimp.
