This recipe was given to me by my (at the time) future daughter-in-law. It is by far the best recipe for this bread that I have found yet.

1 cvegetable oil

1 1/2 cgranulated sugar

2 cgrated zucchini

3 tsppure vanilla extract

3 call purpose flour

1/2 tspbaking powder

1 tspsalt

1 tspbaking soda

2 tspcinnamon, ground

1 cchopped walnuts
How To Make karen's zucchini bread

1Beat eggs until light and foamy. Add the oil, sugar, zucchini, and vanilla. Sift together flour, salt, baking soda, cinnamon, and baking powder. Add to the egg mixture. Mix until blended, add walnuts. Divide batter, pouring 1/2 in each pan. Bake for 1 hour at 350 degrees. Cool.
