This recipe was given to me by my (at the time) future daughter-in-law. It is by far the best recipe for this bread that I have found yet.

Ingredients For karen's zucchini bread

  • KAREN'S ZUCCHINI BREAD
  • 3 lg
    eggs
  • 1 c
    vegetable oil
  • 1 1/2 c
    granulated sugar
  • 2 c
    grated zucchini
  • 3 tsp
    pure vanilla extract
  • 3 c
    all purpose flour
  • 1/2 tsp
    baking powder
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 2 tsp
    cinnamon, ground
  • 1 c
    chopped walnuts

How To Make karen's zucchini bread

  • 1
    Beat eggs until light and foamy. Add the oil, sugar, zucchini, and vanilla. Sift together flour, salt, baking soda, cinnamon, and baking powder. Add to the egg mixture. Mix until blended, add walnuts. Divide batter, pouring 1/2 in each pan. Bake for 1 hour at 350 degrees. Cool.
