This is my grandmother's recipe. Even my husband, who can't stand vegetables adores this bread. It's extremely moist and tastes wonderful grilled on a griddle.

1 coil

2 csugar

1 Tbspvanilla extract

1 tspsalt

3 cflour

1 tspbaking soda

2 tspcinnamon

1 1/2 craisins

3 craw shredded zucchini
How To Make janet's zucchini bread

1Mix all ingredients together with the exception of the Zucchini. Add zucchini once everything else is incorporated completely otherwise it will release too much juice.

2Pour batter into two greased loaf pans.

3Bake at 350 for one hour.
