This banana bread is very popular with my family and my ex-husband's family. I get requests for it and the recipe all the time. I wanted to make it into a mix. While looking at it, I discovered it wouldn't be the least bit difficult. So here it is!

Amy's homemade banana bread mix makes a delicious loaf of banana bread and would be a delicious gift. The dry ingredients and the streusel topping are measured into resealable plastic bags. You can package those bags with a loaf pan and instructions for a lovely hostess gift. It's filled with freshly mashed ripe bananas that add a ton of banana flavor and help create a moist banana bread. We loved the crunchy streusel on top for a touch more sweetness.

2 call-purpose flour

1 1/2 tspbaking powder

1/2 cunsalted butter, room temperature

1 1/2 cvery ripe bananas, mashed (5 medium)

How To Make homemade banana bread mix (amy's)
Test Kitchen Tips
We made 1 5x7 loaf and 2 mini loaves. Our large loaf baked for 55 minutes, and the mini loaves baked for 30 minutes.

1In a large Ziploc bag, add flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

2In a small Ziploc bag, add brown sugar, nuts, flour, and cinnamon.

3When you're ready to make the banana bread, preheat the oven to 350 degrees. Prepare desired pan(s) generously with vegetable spray and set aside. Cream butter and sugar until fluffy. Add mashed bananas and eggs and beat well.

4Add the flour mixture to the liquid.

5Beat just until combined. Do Not Over Beat.

6Pour into prepared pans and spread as evenly as possible. For muffins/cupcakes with higher tops, fill cups 1/4 inch from the top (you will have a few less yield). For regular muffins/cupcakes fill 3/4 full.

7For the streusel, empty mix contents into a bowl. Cut the butter in with a pastry blender or a couple of butter knives. The mixture will resemble large peas (not bigger).

8Sprinkle on bread loaves, pans, or muffins/cupcakes generously and evenly before baking. Bake until a tester comes out clean. Bake for designated times: - 4"x7" loaf pans (2) for 20-25 minutes or (1) for 55 minutes - 8-9" rounds for 30-35 minutes - 13x9" for 40-45 minutes - cupcakes/muffins for 15-20 minutes - standard Bundt for 50-60 minutes

9Allow bread to cool in pan/s for 5 minutes before removing to cooling racks to cool completely. Refrigerate either in an airtight container or well-wrapped in foil.
