How To Make hobo pineapple bread
-
1In a large pot boil the water and add the raisins and baking soda. Let sit overnight in refrigerator. The raisins will be very plump the next day. If you don't want to let it sit overnight you can put it in the refrig for a few hours. I have always used the overnight method.
-
2Stir raisin mixture and then add the sugar, oil and salt. Add your flour, pineapple and nuts and stir until well blended.
-
3Divide bread mixture among three 1 lb. greased coffee cans and bake at 325 for 1 hr and 10 min. If you can't find a few can's bake in a loaf pan..

4This bread is very tasty and can be eaten for breakfast or with a cup of afternoon tea. Good with butter or creamed cheese. Enjoy !
