grandma's zucchini bread

This is a family recipe that was taught to us by Grandma Betty. We always shredded the zucchini in the late summer and would freeze it for making this at Christmas time for the family. Grandma would make sure each family would get a loaf. I now carry that tradition by giving as Christmas presents to family and friends.

Ingredients For grandma's zucchini bread
- WET MIX

4 1/2 csugar

2 coil
-
4 czucchini
-
2 Tbspvanilla extract

6 lgeggs
- DRY MIX

2 cwalnuts (optional)

6 call purpose flour

2 tspsalt
-
2 tspbaking soda
-
2 1/2 tspbaking powder

2 tspnutmeg
-
2 Tbspcinnamon
How To Make grandma's zucchini bread

1Preheat oven to 350 Grease and flour glass loaf pans (3-4 pans)

2Mix Oil , Sugar , Zucchini and vanilla together.

3Beat Eggs well and then add to oil , sugar mix .

4Mix and then sift dry ingredients together. Slowly add dry mix to wet mix. Mix until no lumps remain .

5Fill glass loaf pans (greased and floured) to about 2/3 full.

6Bake at 350 for 1 hour or until centers are done. I usually insert a butter knife and if it comes out clean , it's done. Let cool in pans.
