I made this today with my own blend of GF flours. The recipe was originally on the bag of flour that I bought. The family said it was delicious; even though they can eat wheat flour! Success!

Ingredients For gf banana bread

1/3 coil-i used vegetable
-
2/3 cbrown sugar, firmly packed

2 lgeggs

1 tspvanilla
-
1 3/4 call purpose gluten free flour (recipe follows)

2 tspbaking powder

1 1/4 tspcinnamon
-
1 tspxanthan gum
-
1/2 tspsalt
-
1 1/2 cbanana, mashed
-
1/2 cwalnuts or pecans
-
1/2 cchocolate chips or raisins
- GLUTEN FREE FLOUR MIX

1 cwhite rice flour
-
1 csorghum flour
-
1 ctapioca flour
-
1 ccornstarch
-
1 calmond or coconut flour
How To Make gf banana bread

1For GF flour: Mix all flours together thoroughly and store in an airtight container in the refrigerator. Whisk together again to fluff before measuring.

2For bread: Preheat oven to 350F. Grease 8x5 loaf pan with spray grease.

3Cream together oil, sugar, eggs and vanilla in a mixer bowl.

4In another bowl mix together the flour, xanthan gum, salt, baking powder and cinnamon.

5Mix the flour mixture into the sugar mixture alternatively with the mashed banana. Beat until smooth.

6Stir in nuts and raisins or chocolate chips. Transfer to baking pan and bake for 1 hour.
