A great way to use up those over ripe bananas! This banana bread can be fully vegan if you use oat milk and vegan butter.

Ingredients For frosted banana oat bread

3very ripe bananas, mashed

1/2 csugar

1/4 clight brown sugar, packed

1/2 coat milk (or regular milk)

1/3 cvegetable oil

2 lgeggs, room temp

1/4 cunsweetened apple sauce

1 tspvanilla

2 call-purpose flour
-
1/2 cquick oats
-
1 tspbaking powder
-
1/2 tspbaking soda
-
1/4 tspsalt
-
2 tspcinnamon
- ICING:
-
3/4 clight brown sugar, packed
-
6 Tbspoat milk (or regular)

3 Tbspbutter
-
2 cpowdered sugar
How To Make frosted banana oat bread

1Preheat oven to 350F. Grease or spray a loaf pan, set aside. Make sure eggs are at room temperature. If not, place them in warm water for 5-8 minutes.

2In a large bowl, mash the bananas. Whisk in the sugars, milk, oil, eggs, applesauce and vanilla.

3In a separate bowl, mix together the flour, oats, baking powder, baking soda, salt and cinnamon.

4Add the dry ingredients to the wet ingredients. Combine using a rubber spatula. Mix until no flour pockets can be seen, but don't overmix.

5Scrape the batter into the prepared pan. Bake for 70 minutes, until a toothpick inserted into the middle comes out with a few crumbs. Remove from oven and let cool for 10 minutes.

6Run a knife around the edges of the pan to gently separate the loaf. Turn out onto a rack. Flip over, right side up. Cool completely before icing.

7Make the Icing: WHEN THE CAKE IS FULLY COOLED... Bring the brown sugar, milk, and butter to a boil in a small saucepan, whisking continually. Remove from heat. Stir in the powdered sugar until no lumps remain. Let cool for about 4 minutes, stirring occasionally. It will thicken quickly.

8Pour the icing evenly over the top of the cake, working quickly because it will set real fast. Avoid layering the icing. Allow to set for 15 minutes before slicing.
