Ingredients For french fritters

2eggs, separated

2/3 cmilk

1 csifted flour
-
1/2 tspsalt

1 Tbspbutter, melted

2 Tbsplemon juice
-
1grated lemon rind
-
2 Tbspsugar

4apples, oranges, pineapple, figs or pears
How To Make french fritters

1Sprinkle fruit slices of your choice with the lemon rind and sugar and let stand for 2 to 3 hours.

2Drain and dip in the thin fritter batter.

3Batter: Beat together with mixer, egg yolks, milk, flour, salt butter and lemon juice, (May add 2 tablespoons sugar and dash of nutmeg.)

4Fold in the stiffly beaten egg whites.

5Fry in deep fat 375 degrees.

6Drain and serve hot with confectioner\'s sugar, or a sweet syrup or sauce.
